Image Gallery: Souped-Up Chocolate-Covered Marshmallows

I did a post a couple of weeks ago for Chocolate-Covered Marshmallows with Strawberry Hats and loved them so much that I couldn’t help but wonder…what else could I put on top of chocolate-covered strawberries? Turns out, LOTS of stuff, as you’ll see below.

I love these because they are very simple to prepare, but they are—quite literally—some serious eye candy. And because the topper possibilities are endless, you can easily make them work for any party theme…bridal showers, baby showers, birthdays, etc. Choose your topper according to your color scheme! I tried lots of stuff…strawberry slices, shaved coconut, kiwi slices, halved raspberries, sliced crystalized ginger, dried mango and pineapple, assorted candies and sprinkles, crushed rock candy, shaved chocolate, and mini chocolate chips.

Souped-Up Chocolate-Covered Marshmallows
Dessert | Gluten-Free
(and there are vegan marshmallows out there if you can track some down!)
Ready in:
about 1 hour
Makes: 12 marshmallow treats

Ingredients:
1/2 cup chocolate chips
12 large marshmallows
Topper(s) of your choice

Directions:
1. Prepare a cookie sheet or plate covered with parchment paper to set chocolate-dipped marshmallows on.
3. Over high heat, bring 1 to 2 inches of water to a boil in a medium saucepan. Reduce heat to low and place the bowl in the saucepan. Be sure the water doesn’t get displaced enough to spill over into the bowl.
4. Pour in chocolate chips.

5. Stir until completely melted.

6. Dip marshmallow into chocolate to cover about a 1/2 inch of marshmallow, then place chocolate side up on plate or cookie sheet.
7. Press your topper into the chocolate, then repeat process with remaining ingredients. (Some chocolate brands are slow to harden, so you might want to put the marshmallows in the fridge for an initial 2 to 3 minutes so that the chocolate starts to get “sticky”—it’ll be easier to get the toppers stay put. Then return them to the fridge as directed in the next step.)
8. Refrigerate for 15 to 20 minutes, until chocolate has hardened. If you are using fruit toppers, keep the marshmallows stored in the fridge until about 15 minutes before serving. If you aren’t using fruit toppers, you can just store them at room temperature.

NOTE: To keep the marshmallows well protected, store them in deep container with a lid.

BTW, I actually did stack the marshmallows pictured below on top of each other into a legit pyramid. Not sure why it didn’t occur to me to place them flat and shoot the pic from above. Sometimes, I’m not that bright, but I was able to get this one shot off before it all came tumbling down. Such a delicious mess. 🙂
