I can’t drink alcohol anymore because it gives me insomnia (seriously, I have a half a glass of wine at noon and I don’t sleep until 6am—it’s a big fat bummer), so I’m always on the lookout for fun drinks to sip along with my friends at BBQs, or just to enjoy at home with popcorn and a movie.
My favorite thing about this recipe is that you can prep several servings at a time, and store everything until you want one (or more). I freeze the lemonade-strawberry mixture into ice cubes, then pour one bottle of rhubarb flavored DRY soda over a handful of the cubes. So, it’s great for when you want just a glass for yourself, or if you have guests over—expectedly or unexpectedly.

Strawberry Rhubarb Lemonade
Prep time: 5 min
Ready in time: 8 hours (or as long as it takes the ice cubes to freeze)
1-1/2 cups strawberries (6 to 8)
3 tablespoons maple syrup (or other natural sweetener)
4 to 6 12-ounce bottles rhubarb-flavored soda (I use the DRY brand because it’s just lightly sweetened. You can also use plain sparkling water.)
TIP: Keep the soda at room temperature so that it melts the ice cubes a little faster. But if it’s a really hot day and you’re serving these outside, chill the soda beforehand. Also, if you’re serving the whole batch at once, you might want to have some extra bottles of the soda on hand to re-fill any glasses of quick drinkers who still have semi-melted ice cubes in there.
1. Juice the lemons and slice stems off strawberries.
2. In a blender, process the strawberries, lemon juice, and maple syrup.
3. Pour the strawberry-lemon mixture into an ice-cube tray and put them in the freezer.
