Grain-Free Secret Spinach Pancakes

Secret Spinach Grain-Free PancakesI needed a quick dinner the other night and I hadn’t quite pulled myself together from being out of town over the weekend, so my fridge didn’t have much to offer up. And you know what just sounded really good? Pancakes. Because I do enjoy my breakfast for dinner from time to time.

But I was feeling a little guilty about the lack of veggies that my usual go-to pancake recipe delivers, so I figured, why not throw in some spinach? I was pretty sure I wouldn’t even be able to taste it, and I was right.

You honestly would never know it was there—hence, “Secret Spinach”—if it weren’t for the color. I’m totally doing this with these guys from here on out.

Grain-Free Secret Spinach Pancakes
Prep:
5 min |  Cook and serve: 5 min
Yields:
4 to 6 4-inch pancakes

Ingredients:
1 not-very-ripe banana
2 eggs
1/2 teaspoon vanilla
1/4 teaspoon salt
1 fistful of spinach
1/3 cup tapioca flour

Directions: 

  1. Combine all ingredients in a blender and process until smooth—should just take a few seconds.
  2. Coat a large skillet with cooking spray and set to medium-high heat. Pour 2 to 3 tablespoons of batter per pancake and cook until browned—2 to 3 minutes on each side.

I love them with blueberry lavender cashew cream cheese …

    • Thanks so much!! Almond, rice, or coconut flours are all good alternatives. Though, just be aware that the texture of the pancakes won’t be quite as spongey. Good luck, hope you enjoy them!
