I recently came across a cocktail recipe that included plum syrup and I immediately became obsessed with the color—it reminded me of this smoothie I made in August when I was really craving fall. That purple (or do you see pink? I kinda see both…) is just so rich, and I can’t get enough of it right now.
Of course, I get the alcohol insomnia, so can’t indulge in this particular beverage, but wanted to create a mocktail version. This one is super simple: just plum syrup and ginger beer. That’s all it needs! (Though, if you’d like ideas for how to turn this back into a cocktail, I’ve included tips below from my one of my most cocktail savvy friends.)
Yields: 1 12-ounce drink
Prep time: The plum syrup takes 1 hour to cook and cool.
Ready in: 1 hour, 5 min
2 tablespoons plum syrup
10 ounces of ginger beer
Sliced or cubed plum and candied ginger for garnish, optional
Directions: Add plum syrup to a glass, then fill with ice and pour in ginger beer. Stir to mix, then garnish with optional extra plum and candied ginger pieces.
Want something a little stiffer? My friend Julie recommends adding a shot of vodka and serving on the rocks in a highball glass for a light, crisp version. For a more winter-y something, add bourbon (as in this cocktail that served as my inspiration) and pour straight-up in a martini glass, Manhattan style.
