Acorn Squash Quiches

I’m always trying to think of  creative ways to make crustless (i.e. gluten-free) quiches, and to that end, made a pretty delicious potato-crusted version a few months ago—I mean, who wouldn’t want a quiche wrapped in crispy potatoes?!   Then, while working on some squash recipes this fall, I noticed that, when cut open and seeds removed, the hollow part of an acorn squash seemed to be exactly the right size to fit an egg. Oohhh, I thought, that’s fun! I had to experiment with the baking method a bit—pre-baking the squash before adding eggs seemed like the way to go, but the egg actually needs just as much time to bake as the squash. And turns out you can actually get one and a half eggs in there. All the more hearty! This recipe is the perfect one-dish breakfast for two that requires very little effort, other than the muscle you need to put into slicing the squash. Baked Eggs with Fried Shallots and Spinach (plus a Potato-Sunchoke side)

I recently housesat for a friend who has two horses, several geese, a dog, two cats, and LOTS of chickens. Chickens! You know what that means…an virtually unlimited supply of farm fresh eggs. I mean, look at these things…  An egg dish post was a must. Obviously. And believe it or not, I’d never baked eggs before, so that was an easy decision. Plus, I found the perfectly sized ceramic ramekin in the kitchen that was begging to be a part of the action. I kept things pretty simple…I added a little spinach to the eggs, and just topped them with crispy shallots, letting the eggs be the star alongside some fresh fruit and fried potatoes and sunchokes. The great thing about breakfast is that you don’t really need to do much to it to make it amazing. Breakfast is the best, and this meal is proof. Easy Springy Poached Eggs and Asparagus

I’ve been frying and scrambling eggs all my life, but have recently been obsessed with poaching and soft boiling. Is it crazy that I never knew soft boiling was a thing? I’m still working on mastering that skill—actually, that sentence would be more accurate if you replaced “working on” with “nowhere near.” Seriously, how do you peel the shells off those things without burning the H-E-L-L out of your fingertips? I have dropped many an f-bomb trying to figure that out, so if you have any tips, lay ’em on me. Poaching eggs, on the other hand, has come easier, and I wanted to make a simple meal that paired them with a spring veggie. Enter: asparagus, which is at it’s best in April.
